Cowboy Oatmeal Bars/Okra Casserole/Ziploc Omelets/Orange Dream Pop

Cowboy Oatmeal Bars

These one bowl bar cookies travel and freeze well.

Ingredients:
1 cup Butter, softened
3/4 cup firmly packed brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups uncooked quick-cooking oats
1 cup peanut butter chips**
1 cup milk or real semi-sweet chocolate chips**
1 cup coarsely chopped walnuts

Instructions:
Heat oven to 375°F. Combine butter, brown sugar and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed. Add oats; mix well. Stir in peanut butter chips, chocolate chips and walnuts by hand.  Press dough evenly into ungreased 15x10x1-inch jelly-roll pan. Bake for 16 to 20 minutes or until golden brown. Cool completely. Cut into bars.
**Substitute 1 (11-ounce) package (1 2/3 cups) peanut butter and milk chocolate chips for peanut butter chips and chocolate chips.

Okra Casserole

1 cup chopped onion
1 cup hush puppy mix
2 eggs, slightly beaten
8 tablespoons vegetable oil
3/4 teaspoon pepper
1 teaspoon salt
1 teaspoon garlic powder
1 1/2 cups sweet milk
4 cups cut okra, fresh or frozen

In a large bowl, mix the ingredients in the order of which they are given, adding okra last.  Pour into a casserole dish (8x11) greased with Pam.  Bake 1 hour in oven preheated to 375 F.  Should be brown when done.  If top doesn't brown in this length of time, turn oven on broil for a few seconds to brown casserole on top.  Watch closely.  Also, if you use frozen okra, drain okra and get all the moisture you can out of the okra.  When done, the casserole is ready to be served, cut into squares.  Use a spatula to remove from dish.

Ziploc Omelets

(Be sure your ziplocks can go in the hot water.)

Have you ever heard of this? This works great! Good for when all your family is together and no one has to wait for their special
omelet.
Have guests write their name on a quart-size ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
Each guest adds prepared ingredients of choice to their bag and shake, make sure to get the air out of the bag and zip it up.
Place the bags into rolling, boiling water for exactly 13 minutes. (You can usually cook 6-8 omelets in a large pot.)
For more, make another pot of boiling water. Open the bags and the omelet will roll out easily. Be prepared for everyone to be
amazed. Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece

Orange Dream Pop

These frosty orange pops will be the highlight of a hot summer day. All the kids in the neighborhood will want to join in the fun.

Servings: Makes about 10 pops
Prep Time: 10 minutes

Ingredients

3 cups orange juice or refrigerated orange juice blend

1 (14-ounce) can EAGLE BRANDŽ Sweetened Condensed Milk (NOT evaporated milk)

1/4 cup lemon juice

10 (5-ounce) paper cups

10 wooden sticks

Instructions

In large bowl, stir together orange juice, EAGLE BRANDŽ and lemon juice. Pour into paper cups.

Cover each cup with foil. Make small hole in foil with knife. Insert wooden stick or plastic spoon into each cup through hole. Freeze overnight or until firm. To serve, remove foil; tear off paper.
