Petite Macaroon Cups/Breath O' Spring Macaroni/Marinade (for steak)/Marshmallow Truffles/Orange-Honey Muffins

Petite Macaroon Cups

Servings: Makes 4 dozen cups
Prep Time: 25 minutes

Ingredients

1 cup butter or margarine, softened

2 (3-ounce) packages cream cheese, softened

2 cups all-purpose flour

1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)

2 eggs, beaten

1 1/2 teaspoons vanilla extract

1/2 teaspoon almond extract

1 1/3 cups flaked coconut

Instructions

In large bowl, beat butter and cream cheese until fluffy; stir in flour. Cover; chill 1 hour.

Preheat oven to 375°F. Divide dough into quarters. On floured surface, shape 1 quarter into a smooth ball. Divide into 12 balls. Place each ball in a 1 3/4-inch muffin cup; press evenly on bottom and up side of each cup. Repeat with remaining dough.

In medium bowl, combine EAGLE BRAND®, eggs and extracts; mix well. Stir in coconut. Fill muffin cups 3/4 full. Bake 16 to 18 minutes or until slightly browned. Cool in pans; remove. Store loosely covered at room temperature.

Notes: Chocolate Macaroon Cups: Beat 1/4 cup unsweetened cocoa into egg mixture; proceed as above.

Breath O' Spring Macaroni

4 ounces elbow or shell macaroni
1 cup sour cream
1/2 cup chopped green onion
1/2 teaspoon salt

Cook macaroni in boiling salted water until tender (about 8 minutes). Drain
and rinse. Combine macaroni with sour cream, onion, and salt, and toss
lightly. Chill in refrigerator and serve cold, or heat in saucepan and
serve hot. Makes 4 servings.

Marinade (for steak)

Makes 1 cup marinade

1/2 cup Worcestershire sauce
3 Tbsp. olive or vegetable oil
3 Tbsp. balsamic vinegar
1/4 tsp. salt

Combine all ingredients and refrigerate.  Marinade steaks.

Marshmallow Truffles

Prep Time: 20 min
Total Time: 2 hr 20 min
Makes: 20 servings, about 2 truffles each

1 pkg. (12 oz.) BAKER'S Semi-Sweet Chocolate Chunks, melted
1 pkg. (10 oz.) JET-PUFFED Marshmallows
2/3 cup PLANTERS Pecans, chopped

MELT chocolate as directed on package. Dip marshmallows, one at a time, in chocolate, turning to evenly coat each marshmallow. Gently shake off excess chocolate. PLACE marshmallows, in single layer, on sheets of wax paper. Sprinkle each with about 1 tsp. of the pecans. LET stand at room temperature 1-1/2 to 2 hours or until chocolate is set. Store in airtight container at room temperature.
Size It Up - Enjoy this indulgent treat on occasion, but keep portion size in mind.
Take a Shortcut - Use food processor to quickly chop the pecans.

Orange-Honey Muffins

Ingredients:
½ cup Florida’s Natural® Premium Brand Orange Juice
2 cups unbleached flour
¼ cup sugar
2 teaspoons baking powder
1-teaspoon baking soda
½ cup honey
2/3-cup margarine, melted
½ cup fat-free egg substitute
1-teaspoon vanilla extract

Instructions:
1. In a medium bowl, combine the flour, sugar, baking powder and baking soda.
2. In a small bowl, combine the honey, orange juice, margarine, egg substitute and vanilla; mix well. Stir into dry ingredients.
3. Coat 12 muffin cups with nonstick spray. Fill each cup 2/3 full with batter. Bake at 375° F until golden, 15 to 20 minutes. Makes 12 servings.
