What is healthy eating? I think that depends upon your genetic makeup. In general, everyone should avoid trans/hydrogenated fats (if it says hydrogenated in the ingredients, then it has trans fat, regardless of what the label claims), corn syrup (especially high fructose), sugar (our bodies were just not designed for the rush) and most if not all processed foods. Some people need more veggies, some can't tolerate much fruit or honey, some need large quantities of meat. You have to pay attention to your body. Most bodies today are so inundated with processed food that it is difficult to hear what our bodies are trying to tell us. In many cases those who have undiagnosed allergies and sensitivities begin to crave the very foods which are harming them (grains, dairy, etc). In some cases (i.e. me), our bodies begin shouting at us with sore joints, headaches, muscle pain, back pain, eczema, tooth enamel defects, mouth ulcers, stomach pain, chronic exhaustion, auto-immune disorders and more. Conditions such as arthritis, diabetes, infertility and inflammatory bowel diseases are often treated as though they came from nowhere, rather than quite often resulting from food sensitivities. We follow a diet based on the SCD diet based on Elaine Gottschall's Breaking the Vicious Cycle. The science behind the diet is really wonderful. Unfortunately, due to casein sensitivities, we follow the diet without dairy. All of our snack ideas and recipes are SCD compliant, dairy free and gluten free. If you are interested in the diet, please read the book - do not just follow our recipes blindly. Also keep in mind that the diet is for healing rather severe issues. We did not do the intro to the diet - we just do not eat the "illegal" items or dairy. Enterolab - "a registered and fully accredited clinical laboratory specializing in the analysis of intestinal specimens for food sensitivities." There are many labs specializing in these sorts of things. We chose this one because we believe this is the most sensitive and accurate test available right now. They measure the amount of antibody in the gut - it's like a pregnancy test - you either mounting an immune response or you are not. Many people with gluten sensitivities never show antibodies in their blood, or only show them when severe damage is present. This test can catch it early - personally, I'd rather know before the damage is severe. There are many many sites on the internet dedicated to spreading nutritional knowledge. Some are great, some are not. Do your research and do not accept things just because someone wrote them down.
