Yields: 4 Servings


Ingredients

4 ea Green Peppers
1 pound Lean Ground beef
1 cup Rice
1 1/2 teaspoon Salt
1/4 teaspoon Black pepper
1 small cans Tomato Paste
1 tablespoon Oregano
1 tablespoon Basil


 
Instructions
Slice off tops of green peppers and remove inside pulp and seeds. Cut small hole or slit at the bottom of each pepper. Remove stems from the tops of peppers by cutting around them. Set aside.

In large mixing bowl combine ground beef, rice, salt, and pepper. Mix with 1/4 cup water, then add water, a few tablespoons at a time, until you can form very soft balls with the mixture. If your stuffed pepper meat comes out too hard, it means you didn't add enough water.

Divide up meat mixture and fill the peppers with it. Place the tops back on the peppers. Place the stuffed peppers in a large cooking pot or crock pot.

Open the tomato paste and put it In a mixing bowl (you can use the same one you used for the meat). For each can of tomato paste you use, add 3 cans of water. Add the oregano, basil, and another 1/2 teaspoon of salt and some pepper. Mix together well and pour over peppers.

Cook covered over medium heat on the stove top for a couple of hours, or in oven at about 350, or in crockpot all day.
