s Chicken with Spaghetti s   


Mammy's recipe. All measures are approximate; you can even make this without the chicken if you want. Lots of broth makes this dish more like a soup.
Yields: 8 Servings


Ingredients

1/2 pound Chicken pieces
2 tablespoons Olive oil
2 clove Garlic
1 teaspoon Salt
Pepper
Oregano
Basil
Chicken bouillon
Parmesan
Spaghetti


 
Instructions
In a deep skillet or pot, brown chicken on all sides in oil. Reduce heat; add garlic, salt, pepper, oregano, basil and let it all brown together in the pan for a while. When everything is nicely browned, add as much water as you want (or as much as the pan can hold!). Add the chicken boullion and as much seasonings as you like. A tablespoon of crushed Oregano and another of Basil, at least. Bring to boil on high heat, reduce heat and let simmer for at least a half an hour or until chicken is cooked through. Serve with lots of the broth over hot cooked spaghetti. Top with parmesan cheese. Goes good with fresh salad and a crusty baguette.
