s Aunt Boonya's No-Bake energy bites s   


Another vegan favorite from Aunt Boonya...
Yields: 24 1" balls


Ingredients

2 cups rolled oats
1/2 cup raw pumpkin seeds
1/2 cup raisins
2 tablespoons cup raw sunflower seeds
2 tablespoons raw sesame seeds
1 tsp cinnamon
1/2 cup nut butter (almond, cashew, sunflower, or any combination)
1/3 cup honey
2 tablespoons Brown Rice Syrup
1 tsp vanilla extract
Dried coconut


 
Instructions
Mix the first 6 dry ingredients together in a bowl. Add the nut butter, honey, rice syrup, and vanilla. If the nut butter you are using has no salt, add a pinch of salt.

Mix well. If the mixture is too dry, add a little bit more honey.

Moisten your hands with water and roll into small balls, then roll each ball in dried coconut. You will probably need to re-moisten your hands after each 4 or 5 balls. Place the balls on waxed paper, and let stand about ½ hour, then refrigerate.
